ARISTON ASPASIE

Ariston Aspasie is located in the village of Brouillet, pushed far into the northwest corner of the Champagne region. The estate's radical location is part of what makes their vineyards so special. Planted at the extreme edge of the region, the vines exist in a polycultural region that extends beyond grapes. There are grains, vegetables, and various other local crops (rather than just Champagne varietals) and for that reason they have some of the healthiest vineyards—period. Paul-Vincent Ariston is one of the most meticulous and patient winemakers, as even this most basic wines spend five years aging on the lees (meaning the expired yeast cells are left in bottle to add extra richness). After years of working directly with Paul-Vincent, Aspasie is one of the most recognizable and beloved labels we carry to date.
