ANTECH

For six generations Antech has been an independent family business specializing in the production of sparkling wines. They produce about 950.000 bottles annually of Crémant, Blanquette de Limoux, and Blanquette Méthode Ancestrale. The winery, where tradition and modernity are working hand in hand, is located in Limoux—at the Domaine de Flassian. The sparkling wines are the expression of a delicate combination of land, the grape varieties—Chardonnay, Chenin and Mauzac—and traditional values. Antioch believes in authentic and direct winemaking, with respect for the environment. All of the grapes come from vineyards conducted within sustainable agriculture guidelines. All grapes are hand picked, carried to the fermenting room in cases of at most 300 kilograms, and then immediately pressed pneumatically. The juices selected are then fermented in temperature controlled stainless steel vats set at low temperatures. Effervescence then occurs naturally over a period around twelve months according to the traditional method, in temperature controlled cellars. The hillsides and terraces at Antech are of gentle sloping clay-limestone soil, and grapes are grown within a Mediterranean climate with an oceanic influence. The vines on average are between twenty and forty years of age.
