Tavel, across the Rhône from Châteauneuf-du-Pape, is the only French appellation that produces rosé and nothing else, and its wines have enough richness, brawn and bravado to stand up to sage-scented sausages. The Cave de Tavel is the village cooperative, and its Cuvée Royale is the classic article.
Oft maligned by drinkers of the pale new-wave rosés, Tavel is the original — and still the one to drink with dinner.
