Domaine de Fondrèche at Mazan is the estate that put the Ventoux on the map, under Sébastien Vincenti. The vineyards sit on the cooler side of the mountain, and the wines have a freshness the southern Rhône rarely manages. Persia, 90 per cent Syrah with Mourvèdre from one of the estate's coldest terroirs, is inky and rich with blackberry, cassis, licorice and tar.
