Pauline Pabiot took the reins of her family estate a few years ago and has quickly established herself as one of the rising talents of Pouilly-Fumé. Formerly known as Domaine Roger Pabiot, the estate reflects generations of farming in the Loire that long predate the appellation's formal creation; Pauline has taken the vineyards fully organic.
Cuvée Silex is the flint-soil Pouilly-Fumé, De la Terre aux Étoiles the ambitious one; l'Ancestrale is Pouilly-sur-Loire from Chasselas.
