Gary’s Recipe for NYE Success: Laurent-Perrier and Caviar at Home
New Year’s Eve is the one night of the year when everyone is having a party. For me, I prefer to do it at home—it gets a little crazy out there with all those people who don’t get out much! So I save my budget for caviar, and, of course, Champagne, and have a great time at my own dining room table! Caviar and Champagne are a great and storied pairing, but I have found it to take a little more attention than just throwing any bottle together with those precious eggs.
One of the great successes I have had has been with Laurent-Perrier "La Cuvée" Brut Champagne $54.99, which has the incredible freshness and cut to balance out the richness of the bligny and caviar. The soul of the wine comes from its Chardonnay half, super high-quality Côte de Blancs fruit, full of Puligny-like lime and bright back-end chalk. At the same time, the 35% Pinot in the blend brings a nutty mirror to the dish, and the 15% Meunier delivers great fruit as well as subtle savor. Our plan is to get dressed up, walk to our closest nice bar for one drink, and come back and tuck into some Champagne and caviar.
