Based in Vilobí del Penedes, Can Mayol (whose wines are bottled under the trademark “Loxarel”) is undoubtedly one of the top three producers making sparkling wine in Penedes. The Mitjans family has slightly under 30 hectares of vines, farmed organically and implementing biodynamic principles, featuring indigenous grapes such as Xarel-lo (including some very old plantings), Parellada, Macabeo and Xarel-lo Vermell, as well as international varieties like Chardonnay, Pinot Noir and Syrah. Their sparkling wines (we don’t call them “cava” as they voluntarily chose to abandon the D.O.) are all bottled Brut Nature, sans dosage. They are incredibly pure, precise and intriguing, at every price point. Of particular note is the “109 Meses” bottling, which sees – yes, you guessed it – 109 months on the lees, and is bottled without disgorgement. It is an example of Josep Mitjans’ uncompromising way of working and of the original approach at Can Mayol.
