Two Generations of Patos Making Benchmark Wines in Bairrada
Bairrada is one of Portugal’s most distinctive wine regions. Located south of the city of Porto, along the Atlantic coast, it is also one of the coolest parts of the country, defying stereotypes about what Portuguese wine can be like. The climate here is cool and maritime, with high humidity, frequent rainfall, and moderating ocean breezes–all conditions that strongly influence its wines. The region’s soils are famously rich in clay and limestone, which are particularly well suited to the indigenous grape Baga. This unique variety thrives here, producing deeply structured, high-acid, firmly tannic red wines capable of remarkable longevity. Often compared to Nebbiolo or Nerello Mascalese, Baga has a faintly saline edge that is purely Portuguese.
No individual is more closely associated with Bairrada’s modern identity than Luís Pato. Beginning in the 1980s, he championed single-vineyard Baga wines at a time when the grape was often dismissed as too rustic or difficult. Through meticulous vineyard management and lower yields, he demonstrated that Baga could produce wines of finesse, aromatic complexity, and aging potential comparable to great wines elsewhere in Europe. His work helped reposition Bairrada from a region known for tough, tannic reds to one capable of elegance and terroir transparency.
In more recent years his daughter, Filipa Pato, has continued and expanded this legacy. Working with her husband, Belgian sommelier William Wouters, she has launched her own wine label, emphasizing biodynamic farming, minimal intervention, and the expression of indigenous varieties. Her wines often highlight freshness, precision, and lower extraction, offering a refined interpretation of Bairrada’s potential. Together, Luís and Filipa Pato have played a pivotal role in elevating the region’s international reputation.
