Franciacorta is Italy’s premier sparkling wine from Lombardy. It draws upon centuries of history, culture, and winemaking tradition. Its name dates back to the 11th century when Cluniac and Cistercian monks reclaimed the lands, which became known as Francae Curtes—lands free of taxes. It then became "Franzakurta" in 1277. Franciacorta's legacy dates back even earlier than Dom Perignon, with a mention in the Libellus de vino mordaci, a groundbreaking book on bottle-fermented wines published in 1570.

So I save my budget for caviar, and, of course, Champagne, and have a great time at my own dining room table! Caviar and Champagne are a great and storied pairing, but I have found it to take a little more attention than just throwing any bottle together with those precious eggs.

I love it when great wine proves my skeptical heart wrong. Last night, Cinnamon and I drank this great vintage of Cristal with homemade sashimi bowls, and while I was very impressed from just tasting the wine for this video, now I am a complete convert—this is definitely the best Cristal for me since the 2008; it has an energy, a sheen, a brilliance that reminds me so much of that great vintage.

Read MoreThanksgiving is my favorite holiday of the year. I like it so much that it is worth doing twice—the first time to “test out my recommendations for the year”… or at least that is my excuse to get a preview of the main event. Everything about Thanksgiving is perfect for me: I love the sentiment of gratefulness; the opportunity to gather friends and family; the traditional spread of roast turkey, gravy, stuffing, and mashed potatoes; and double fisting with rosé Champagne and Burgundy at the table. This weekend we did just that, and I am happy to report that I have two great Champagnes and one great bottle of Burgundy that have been thoroughly tested and vetted chez Westby by me and my wife Cinnamon!

Read MoreRosé has always been fun, but for long time it was pretty easily dismissed in most wine circles. Hardly ever made with quality grapes, it wasn’t taken very seriously in the U.S.; until a decade or so ago, you’d hardly ever find it on restaurant wine lists. But somewhere along the way, we got the memo! More serious domestic winemakers began making it; more importers began bringing in high-quality examples from abroad; celebrities even starting dipping their toes in the rosé game. It can be a stunningly complex wine in its own right when made with quality fruit and winemaking techniques. Rosé has long been the reigning queen of cheap and cheerful, but some versions are so well made and special that they merit a space in your cellar. Some rosé can develop in the bottle and develop additional depth and character with age. From rosé Champagne to cult-caliber Lebanese bottlings, rosé is—finally—getting its moment in the sun.
