Today is the worldwide release for one of the best of the great 2012 vintage in Champagne, and we are lucky to have an allocation. We had a preview of the 2012 Billecart-Salmon "Cuvée Louis" Brut Blanc de Blancs Champagne before today’s release, and. after tasting it in the morning with Clément from Billecart, I knew that I had to make something special to have with it at dinner. This is a Blanc de Blancs that has it all—and promises to develop well for at least a generation.

Billecart-Salmon’s Clos Saint Hilaire and More

Last week I had the chance to visit one of the most hallowed pieces of ground in the Champagne region, the great Clos Saint Hilaire in Mareuil, at the center of the Billecart-Salmon property there. This vineyard, entirely planted to an old massal selection of Pinot Noir in 1964, makes one of the most profound Blanc de Noirs in the whole appellation. Over the last few years, the Billecart family has put in a huge effort to improve the vineyard, by adding hundreds of different plants along the border of wall, creating bird houses, insect hotels, two small ponds for frogs, and even adding beehives. This new biodynamic approach will encourage ladybugs to eat aphids, birds to eat caterpillars, and, in the end, a healthier vineyard. It is an amazing project to see.

We have known each other for many years, but I hadn’t had the chance to sit down with him since before the pandemic. Vintage Billecart and Sushi Night at the Westbys

Last night, Cinnamon and I treated ourselves to some sushi from the recently reopened Kanpai in Palo Alto and paired it with the magnificent 2007 Billecart-Salmon "Cuvée Louis" Brut Blanc de Blancs Champagne. I had opened it to make a little video presenting the wine (see below), and we enjoyed the rest paired with the great variety that a sushi dinner has to offer. This over-200-year-old house continues to push and strive for ever more quality, and this all-Chardonnay tête-de-cuvée is proof of that.

All-Meunier One-Off from Billecart

I have received more calls for the Billecart-Salmon "Le Rendez-Vous" Pinot Meunier Extra Brut #1 Champagne than any other bottling this year. Yesterday, our small allocation of 180 bottles finally arrived. I didn’t waste time—I am just as excited as all of the customers who called and emailed—so I chilled one down and drank it last night. Cinnamon and I had the wine both as an aperitif, and with the excellent Taiwanese food of I-Dumpling here in Redwood City. It was a huge success both ways and “a small bottle”—our code at home for “we liked it so much that we drank it too fast.”
