A Special Party for a Special Wine: 2015 Cristal

This past Sunday, Cinnamon and I were invited to the pre-release party of the 2015 Louis Roederer "Cristal" Brut Champagne by Jean-Baptiste-Lecaillon, the chef de cave of Champagne Louis Roederer. He was there with Johann Merle, his vineyard manager, whom we were lucky enough to sit with, and the rest of his team. The wine is available for pre-sale now, but won’t arrive until the week of the 19th.

Billecart-Salmon’s Clos Saint Hilaire and More

Last week I had the chance to visit one of the most hallowed pieces of ground in the Champagne region, the great Clos Saint Hilaire in Mareuil, at the center of the Billecart-Salmon property there. This vineyard, entirely planted to an old massal selection of Pinot Noir in 1964, makes one of the most profound Blanc de Noirs in the whole appellation. Over the last few years, the Billecart family has put in a huge effort to improve the vineyard, by adding hundreds of different plants along the border of wall, creating bird houses, insect hotels, two small ponds for frogs, and even adding beehives. This new biodynamic approach will encourage ladybugs to eat aphids, birds to eat caterpillars, and, in the end, a healthier vineyard. It is an amazing project to see.

A Visit with Didier Lapie in Champagne

It is great to be back on the road in Champagne, and last week I visited Vaudemange for the very first time in 23 years of visiting the region. Just southeast of the Grand Cru of Ambonnay, this picturesque part of the region is called La Perle Blanche de la Montagne de Reims, or “the white pearl of the mountain of Reims.” Just below it is Champagne Agricole, with plains of wheat, and it is at the crossroads of the Marne and the Montagne.

The Best for Last? 2008 Billecart NFB Arrives!

Champagne Billecart-Salmon is on fire with great releases this year. All the wine lovers reading this article know them as one of the true greats in the world of Grande Marque Champagne, but this year Mathieu Roland-Billecart and his chef de cave Florent Nys have taken this house to another level. Last month, we had the release of the mind blowing 2010 Billecart-Salmon Brut Rosé Champagne, and now, the incredibly long-aged 2008 Billecart-Salmon "Cuvee Nicolas François Billecart" NFB Brut Champagne is finally out. I had a chance to taste a pre-release bottle of this with Clément Calleja from Billecart at the beginning of the month, and what a wine it is…

Since 1590: Chablis Seguinot-Bordet

During our lovely vacation in Chablis, Cinnamon and I visited Seguinot-Bordet to meet Jean-François Bordet, see his facility, and taste his wines. He is located in Maligny, a picturesque 10-minute drive north of the town of Chablis. Along the way you cross the river Serein to la rive droit and pass in front of Les Clos, Grenouilles, and Bougros Grand Crus and the Premier Cru of Fourchaume—a gorgeous ride!

Visiting Domaine Gérard Tremblay in Chablis

It is hard to come back from Chablis. After a week vacationing in this paradise-like northern corner of Burgundy, I think I have fallen in love for ever. Cinnamon and I had a great time there cooking with the local ingredients, dining at wonderful local restaurants, hiking in the vineyards, and of course, visiting a few producers. One of the catalysts for this trip was a bottle of 2014 Domaine Gérard Tremblay Chablis Grand Cru Vaudésir that we drank on Christmas eve from the case that we bought several years ago. Paired with our local Dungeness crab, it beguiled us, and the empty ended up going on our wall of fame.

Krug x Lemon

Every year, Champagne Krug decides on a single ingredient to inspire top chefs and home cooks a like. This year, that ingredient is the lemon, a fruit that my wife Cinnamon is obsessed with. We decided on a variation of one of my mother’s signature dishes, lemon chicken. But instead of the regular Western presentation with sides, we decided to do it as a Japanese style chicken katsu bowl.

Twelve Memorable Champagnes of 2022

I can’t believe that next month will mark my 23rd year of curating Champagne here at K&L. It seems like the year 2000 was only yesterday! Twenty twenty-two was a blessed year for me for great bottles, and I had the opportunity to taste incredible stuff in Champagne, in Scotland, but also at home. I could not be more grateful for the loyalty of our Champagne-loving customers here at K&L that have given me the opportunity to do this dream job. I hope that you enjoy a look at 12 of my memorable bottles from 2022, which are presented in the chronological order of when I drank them.

Olivier Krug Debuts the 2008 Krug Clos du Mesnil

This past Monday, I was invited to lunch by Olivier Krug, who was visiting California with his team for the debut of the 2008 Krug "Clos du Mesnil" Brut Blanc de Blancs Champagne. We went to Spruce, in the beautiful Pacific Heights neighborhood of San Francisco, and had a great time catching up while enjoying some excellent food and unforgettable Champagne. To call this 2008 release anticipated would be a gigantic understatement—it is one of the very last from this vintage, which I consider the best of my career, and from one of the most important vineyard sites in Champagne.
