In the Loire, the conversation almost always starts with Sauvignon Blanc—Sancerre, Pouilly-Fumé, Menetou-Salon. They are popular, and they are great. But Chenin Blanc is just as noble, and honestly, it deserves a lot more attention than it gets. He practices what he preaches: we get to sell really cool, rare, aged, allocated, and special wines—but, thanks to Clyde, we’ve gotten to taste those too. Never has there been an event where Clyde is present without some exciting bottle he’d dug up from the cellar. He’s showed us the joy of collecting wine: it’s saving a bottle for the perfect moment, and then sharing it with people who will enjoy it too. In doing so, he brought us together, off of the sales floor and around a table over good food, good drink, good company. That is Clyde’s presence in a nutshell.

Read MoreWell over a decade ago, we were introduced to an outlier producer in Limoux called Domaine Bégude whose focus was on pure varietal still wines, all farmed organically. Vigneron James Kinglake was and his wife Catherine established this small estate in 2003 when they fled London’s financial industry and decided to take on the “low-key” world of winemaking in the south of France. Cinnamon and I had a great time there cooking with the local ingredients, dining at wonderful local restaurants, hiking in the vineyards, and of course, visiting a few producers. One of the catalysts for this trip was a bottle of 2014 Domaine Gérard Tremblay Chablis Grand Cru Vaudésir that we drank on Christmas eve from the case that we bought several years ago.
