Silvano Follador very small estate in the Veneto that makes about 3500 cases annually—simply tiny for a prosecco producer. We started working directly with the brother and sister team in 2005—Silvano and Alberta—whose property today has been fully bio-dynamic certified. The quality of their wines stems entirely from their meticulous work in the vineyard. Their commitment to viticulture creates sparkling wines with a pure, crystalline mineral flavor. They started out making traditional dosage wines, but they’ve been making drier wines each year. The cartizze wine they make is treated as a vineyard site (it’s the top site in Prosecco), but while most other producers makes their cartizze wines slightly sweet, Follador now makes a much drier style. We convinced them to back off the sweetness and showcase the expressiveness of the vineyard and the wine now shows a superb quality with great length. Follafor is truly a unique little gem of a producer. Located in the Valdobbiadene—a wildly-rugged and beautiful region about an hour northwest of Venice in the foothills of the Dolomites.
